
Low carb fried fotatoes…what the what?
Eating low carb can be a little challenging for a carbie like me. I love noodles, pasta and potatoes. For the most part I do without them fine, but every once in a while I just have to have them.
That’s why I love the Trim Healthy Mama food plan. It’s based on low carb, but it incorporates healthy low glycemic carbs as well. There’s a limit of 45 grams per meal and you can’t eat them with fats. All fats and carbs are eaten separately. While I do mostly low carb, I can incorporate some carbs without going overboard and still stay on plan and that makes me very happy!
However, white potatoes are not on plan. 🙁
So what’s a girl to do when she has a mad hankering for fried potatoes for breakfast?
She gets creative that’s what!!
This morning I had a craving for crispy fried potatoes with onions and bacon like my dad used to make. I could almost taste them. I think I might have even drooled a little. My first inclination was to say “chuck it” and just make them. But I could hear Serene and Pearl (the Sisters who created THM plan) whispering in my ear rather loudly “No, that’s not on plan! Don’t do it!!”
Was there a low carb alternative? I hadn’t ever seen a low carb fried potato recipe anywhere. That’s when it hit me…
Radishes!!
Yup, you read that right… radishes. I know that sounds really weird, but in the Trim Healthy Table cookbook there is a recipe for beef stew using radishes instead of potatoes. Mr. H and I love this recipe! The radishes are a perfect replacement for potatoes, we don’t even miss them. Radishes are fantastic smashed and roasted and is one of our favs as well (also in the cookbook), so I thought, why not fried?
I headed to the kitchen to give it a shot. I really wasn’t sure if they would brown and crisp up the way I hoped, but they did!!

Thanks for the great tip on using radishes like this. I would have never thought of doing that. We do miss our crispy potatoes at times while on keto.

What kind of radishes did you use?
Hi Stacy. I just use regular bagged radishes from Aldi or Walmart. Nothing fancy, but you could get fancy if you want to!
So the red ones, not daikon the big white ones?
I use the red one but I think any will work. I tried it with turnips last night and they were awesome too Stacy!

Thanks Angela, they are amazing! So close to the real thing that you won’t miss it. I’ve used turnips now too and I’ve shredded and made hash brown with radishes, too!
I chopped radishes up in the food processor added parm cheese and a little almond flour seasons ngs and crusted fish with it. Yum!!

Thanks, I love these fotatoes! It takes 10 medium radishes to make 1 carb, so at most 2 carbs in the radishes for the whole batch!! WooHoo!! Sorry, my recipe plugin doesn’t do nutritional stats but there are free nutritional calculators on both Spark People and My Fitness Pal.

Prepare to be amazed! They are also great whole in roasts in place of potatoes as well as smashed and roasted!
